Sindhi Kadhi with Rice is the most favourite dish of majority of Sindhis. It is easy to cook , could be easily cooked in large quantities , which means its ideal for serving the guests at home. The tangy gram based curry , with lots of assorted vegetables is loved by one and all. It is super healthy and yummy to eat as it contains healthy ingredients like - "Besan" which is beneficial for Diabetic person too.

Recipe Ingredients
1) 2 tbsp vegetable oil
2) 1 tsp cumin seeds
3) 1/2 tsp Meethi Seeds
4) 12 curry leaves
5) 2 green chillies
6) Ginger (as per Taste)
7) 2 tbsp gram flour (besan)
8) 1/4 turmeric powder (HALDI)
9) 1/2 kashmiri chilli powder
10) 2 tbsp jaggery (Gud)
11) 1 1/2 tbsp tamarind paste (khatti Imli)
12) Salt to taste
13) 2 - 3 tomatoes
14) Coriander for garnish
Vegetables
1) 2 - 3 potatoes (in small pieces),
2) 8 - 9 Bhindi (Lady fingers),
3) 1- 2 drum sticks
* Note - we can add more vegetables into it .
Method
1) Soak tamarind (IMLI) in water for some time and mash with hands. Use the paste and discard remaining pulp. Fry bhindi and potatoes.
2) In pressure cooker heat 2 tbsp. of oil and add curry leaves , mustard seeds , cumin seeds and let seeds splutter,
3) Add one gram flour and cook it on low flat while stirring constantly,
4) when the flour turns brown in colour (watch it, else it will burn) add red chilli powder and then grated tomatoes and keep mixing . Add some water , while stirring , to avoid lumps.But be carefully as its splutters a lot at this stage.
5) Add turmeric powder , ginger , green chillies and salt ,place the lid of the pressure cooker , close it and wait for a whistle and then simmer it for 10 minutes ,under pressure.
6) Add the vegetables except bhindi and close the lid of pressure cooker and wait for one whistle.
7) Finally add bhindi , tamarind pulp , coriander leaves and simmer for 2 min.
8)Now, it is ready to Serve with the plain white rice and side dishes which can be like papad , salads ,etc.
